The option of hiding particular pages in a workbook is not here any more, but I cannot figure it out how to remove them from the workbook either. What should I do if I don't want the students to see all the pages in the workbook?

If you go to the worksheet you want to hide, in the top right corner of it you'll find the Menu where there are the options 'Hide' and 'Delete'.
@Ruta is correct, for each workbook page you have the ability to click in the top right corner to hide and edit pages. Thanks @Ruta!
